Whole onions in miso sauce
Tuesday, December 9th, 2008Winter time ! Here is a simple recipe to warm you up.
4 medium size onions
2 inches kombu strip
1 1/2 tsp barley miso
kuzu (optional)
parsley
water
heavy pot w/ lid
- soak kombu , mince and place at the bottom of the pot
- section onions 3/4 deep (if too deeply cut, onion will fall apart)
- place onions on top of kombu, half cover with water, top each onion with 1/4 tsp pureed miso
- cover, bring to a boil, reduce to low and simmer until onions are soft ans transluscent
(you can also bring to a boil and bake at 380′F)
- remove onions ,place on a serving dish
- add diluted kuzu to remaining liquid ,stirring constantly. Pour over onions.
- garnish with chopped parsley
This is a good base to understand long cook dishes and the energy they provide.
